Easy Salsa Chicken Crockpot Recipe

May always seems to get hectic doesn't it?

The end of the school year.  Grad parties galore.  Work to do in the yard.  Preparing for summer.  Planting your garden.  May seems to be a race to get to those glorious long, hot summer days.

If you're anything like me, you might have all intentions to become a better meal planner, but it never seems to "stick".  You find yourself looking for something easy that doesn't take much meal prep.

Our Garden Salsa is a true garden salsa as we grow all the produce for it!

In times where life gets crazy busy, my Crockpot is a lifesaver.

This salsa chicken is a go-to recipe on days where I haven't been in the grocery store in weeks, or where I know I won't have time to prepare a meal because I need to get work done outside.  This is also a versatile recipe where there are many ways you can consume it!

Tomatoes are one of the most utilized produce in our canned goods.  We love getting dozens of pounds of tomatoes off of our vines in August!

And the best part?  This recipe is three ingredients.

Easy Crockpot Salsa Chicken

2 large chicken breasts

1 tablespoon chili powder

32 ounces salsa (we use 2 pints of our homemade salsa, but store bought salsa works as well!)

Rub chili powder onto both sides of chicken breasts.  Put into Crockpot.  Dump salsa over the top.  Cook on high for 4 hours or on low for 8 hours.  Chicken will shred easily with a fork when done.

Serving suggestions:

Serve on top of rice with shredded cheese.

Use as chicken taco filling.

Use as a chicken nacho topping.
