A January full of new recipes

In 2024 I am on a mission to use 52 new dinner, lunch, or breakfast recipes. One recipe per week. I love cooking and being in the kitchen in general, but I was finding myself in a recipe rut in 2023. I would fall back on my old favorites, especially at the end of a long work day when we wanted something “easy”.

A month in, I made homemade pasta, a squash gnocchi sheet pan dinner, a roast chicken, and an apple puff pancake.

This challenge has helped me to look closer at my cookbooks, as well as use up what we have in the freezer. It has also helped me to plan ahead, knowing that I wanted at least one new recipe each week. I am not a hardcore meal planner; each week I have a general idea of what we will have for dinners, but we also have a tendency to stray from the plan. This challenge has helped me to be a bit more organized with a meal plan which I’ve been grateful for. Though I don’t have a set “Monday we are having chicken, Tuesday we are having pork chops…”, I have gotten better at having a list of dinner plans each week.

Every recipe so far I plan to use again, some on a regular rotation. Our sheet pan dinner with gnocchi is very customizable so I plan to revisit this with in-season veggies in summer and fall.

In February my plan is to dig more into slow cooker and Instapot recipes. I use my Crockpot all the time, but my Instapot has been collecting dust. I do love coming home to dinner ready to go in a slow cooker - the house always smell amazing!
