Kabobs

There is inevitably a day in August where I don’t have a dinner meal plan but I want something fresh and tasty, but relatively fast.

Enter, kabobs. I love the versatility of kabobs - we use whatever meat we have in our freezer at the time and I grab whatever veggies are ready. I love how beautiful the skewers are with the summer produce.

Like many meats, the longer you marinade them the tastier they will be, however you can also do a short 30 minute marinade and they will still be tasty.

Kabobs

Marinade

1/4 cup olive oil

1/3 cup soy sauce

1/4 cup honey

2 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon pepper

1 pound meat - we use chicken and pork chops most often

3 bell peppers

2 zucchini

3 onions

Any other veggies you would like!

Soak wooden skewers in water for at least 20 minutes before assembling and grilling..

Mix all marinade ingredients into a large bowl. Cut meat into approximately 1 inch cubes and put in marinade. Cover and let sit in the fridge for 30-60 minutes. Cut all produce to fit onto skewers. This can go in the marinade as well, if desired.

Meanwhile, to prevent skewers from scorching, soak in water while the meat is marinating. Assemble kabobs onto skewers as

desired. Cook on medium high on our grill, approximately 6 minutes on each side. Enjoy!
