Stir Fry

Stir fry is my “ideal” recipe during the busy summer months. It is relatively fast and easy, it is versatile, and there is no beating a tasty stir fry using fresh veggies!

We serve it with brown or white rice, and I love making my own sauce - although there are plenty of stir fry sauce options at the grocery store as well.

I always cook the chopped meat first in a tablespoon of olive oil. We always have chicken on hand, so that is generally my meat of choice for stir fry, especially on the busiest of nights.

I then remove the chicken, add a bit more olive oil to coat the bottom of the pan, then I pan fry my veggies. This does not take very long, typically 2-3 minutes over low-medium heat.

Then I toss it all together with the sauce and give it another 3-5 minutes to cook down while stirring constantly. I’ll often taste test the veggies to make sure they are cooked through.

The best thing about this is the longest amount of time is the time spent chopping veggies and chicken! We serve with brown or white rice.

My all time favorite stir fry veggies include zucchini, broccoli, peppers, and onions! Although - you can’t go wrong with any combination of fresh veggies!

Stir Fry

½ cup chicken broth

1/3 cup soy sauce

2 tablespoons honey

2 teaspoons sesame oil

2 tablespoons ginger

1 tablespoon garlic powder (or 3 cloves garlic, minced)

1 tablespoon cornstarch

crushed red pepper flakes, if desired

Meat of your choice (we use chicken)

Stir Fry Veggies

1. Combine all ingredients for sauce in a bowl and whisk together until fully combined.

2. To make stir fry, heat 1 tablespoon of olive oil in a large skillet or wok. Add protein of choice and cook until browned and almost cooked through. Transfer protein to a clean plate.

3. Add 1 more tablespoon of olive oil to wok and add chopped veggies to the pan. Fry until crisp and tender. Return protein to the pan.

4. Add stir fry sauce and cook for 2-3 minutes, until the sauce has thickened. Serve over cooked rice. Enjoy!

Onions and peppers are some of our preferred stir fry veggies!
